The Upstate is located at the foothills of the Blue Ridge Mountains and offers an abundance of natural beauty, lakes, dozens of waterfalls, and over five hundred historic sites. There is a vast variety of outdoor activities including lakeside camping, fishing, hiking, swimming, whitewater rafting, horseback riding, and golf. WHAT'S NEW AND EXCITING IN THE UPSTATE...
The Fox, a new British style pub in downtown Anderson located at 312 South Main Street, opened it's doors in time to bring in the new year. They feature authentic British food along with more Americanized dishes, a large variety of beers from around the world and local breweries at their oversized bar, and they even have dueling pianos! Check them out and say hello to my favorite bartender there, Ian King!
Another great new restaurant is Bull Feathers Lakeside Grill and Tiki Hut, located at 4403 Clemson Blvd, which was previously Charlie T's. Bull Feathers offers a variety of menu choices like hamburgers, steak, seafood, and appetizers. They have a full service bar with sports on the numberous tvs around the restaurant. Go in for a cold beer and get a warm smile from a great bartender there, Scott Brown!

FEATURED RECIPE
Baked Stuffed Lobster Tails
Ingredients
- 4 8-ounce lobster tails
- 6 tablespoons unsalted butter, softened
- 1/3 cup fresh tarragon leaves, loosely packed
- 1 tablespoons fresh lemon juice
- 2/3 cup bread crumbs
- 1 large shallot, minced
- 3 tablespoons pine nuts, toasted
- 3 quarts water
- 3 tablespoons salt
- 1 onion, cut into eighths
- 1 bay leaf
- 2 large potatoes, halved, crosswise
- salt and pepper to taste
Preparation Instructions
Blend together the butter, tarragon, lemon juice, bread crumbs, shallots and pine nuts in a food processor. Season with salt and pepper. In a large pot, combine the water, salt, onion and bay leaf. Add the lobster tails and cook for 5 minutes. Cut a crosswise slit at each end of the underside of each lobster tail. Cut 2 lengthwise slits down the underside from one crosswise slit to the other to remove only a rectangular piece of the under section of each lobster tail. Spread 1/4 of the stuffing down the tail. Arrange the lobsters in a baking dish and use the potato wedges, one up against each side of the tail, to keep the tail from rolling over. Bake at 450° for 15 minutes or until stuffing is crisp and browned. Discard the potatoes and serve immediately. Serves 4
